Let me show you how easily this granola cup recipe comes together. Granola cups with yogurt and berries are perfect for a healthy breakfast or snack and they're a fun finger food for kids, too!
These cute granola cups use similar ingredients as my berry yogurt parfaits but with a different twist. Their vibe is the same though, in that they're light and refreshing, yet nutritious. Just what you're craving in the summertime.

Ingredients and Substitutions
The ingredients for this recipe are incredibly simple. Chances are that you have most of them on hand.
- Rolled Oats: I like to use old-fashion rolled oats as they will give the cups more structure than quick-cook oats which might be prone to crumbling
- Banana: to bind oats together
- Raw Honey: to give some natural sweetness and help bind "dough"
- Yogurt: whichever type of yogurt you enjoy. It could be Greek yogurt, plain or vanilla yogurt, low-fat, fruit, or even vegan yogurt
- Fresh Fruit and/or Berries: I love berries, that's why I'm using blueberries and strawberries. But most types of fruit would be great, like kiwi, pineapple, mango, or blackberries. Be careful though with citrus fruits, the activity might make your yogurt curdle.
- Butter, Oil, or Non-Stick Spray: to grease the muffin tins

Additional Toppings
- Chia seeds
- Dried fruit (like raisins, craisins, apricots, goji berries, etc)
- Nuts (chopped)
- Chocolate chips
- Coconut flakes
Instructions
Making yogurt granola cups is really easy. And, except for the chilling and cooling period (which is hands-off), it's really pretty quick too.
- In a large bowl, mash the banana with a fork.
- Add the oats, and honey to the mashed banana and mix until well combined.
- Grease muffin tins.
- Add the mixture and divide over 6 cups. Push the mixture to the edges and bottom, so that you are creating a cup.
- Freeze the muffin tray for 30 minutes.
- Preheat the oven to 350 degrees and bake the cups for 30 minutes. Then remove from the oven and let cool off for 10 minutes.
- Carefully remove from muffin tin after cooling.
- Add the yogurt and berries to each cup and serve immediately.
Make-Ahead Instructions
Just like with granola yogurt parfaits, these granola cups tend to become soggy over time if filled with yogurt. The best way is to bake the cups ahead of time and store them in the fridge in an airtight container. You can store them this way for 3-4 days. When you're ready to serve them, simply fill them with yogurt and fruit and you're good to go.
