This easy meal has quickly become a family favorite on busy weeknights. We refer to it as "taco bread" in my house and the whole family enjoys it on taco tuesday. It's delicious: hearty on the bottom, cheesy in the middle and topped with fluffy cornbread - what could be better?

Ingredients
- ground beef or turkey
- garlic
- frozen or canned corn
- black beans
- diced tomatoes or tomato sauce
- taco seasoning
- water
- shredded mexican-style cheese
- jiffy cornbread muffin mix
- milk
- egg
- favorite taco toppings

How to make cornbread taco casserole
- preheat oven to 400℉
- grease a 9x13 baking dish with oil or nonstick cooking spray
- in a large skillet brown meat until cooked through
- drain excess grease
- combine taco seasoning with water and stir with meat
- simmer on medium heat until thickened
- add corn, tomatoes and garlic (if using)
- simmer for 15 minutes, stirring often. The mixture will thicken as the juice from the tomatoes cooks off.
- add meat mixture to bottom of prepared baking dish
- sprinkle cheese evenly on top
- in a large bowl combine cornbread mix according to package directions
- pour mixture evenly on top of cheese layer
- bake for 20 min until cornbread is golden brown all over
- Remove from oven and let cool for 10 minutes before serving

- top with favorite toppings like bell pepper, green pepper, green chiles, black olives, a dollop of sour cream, taco sauce, salsa, green onion, avocado slices and serve with tortilla chips
Can taco cornbread bake be prepared ahead of time?
Taco meat can be prepared ahead of time, but assembling the casserole and topping it off with the cornbread mixture should happen right before baking. Otherwise cornbread batter will seep through the meat layer and make it soggy.

Here are some tips on how to make this dish even more kid-friendly.
- Garlic - leave it out if your kids don't like it
- Tomatoes - replace diced tomatoes with tomato sauce if they don't like the texture of tomatoes
- Spice - use "mild" taco seasoning, start with 2 tablespoon at first
